Yes, Cetotec offers both a retro-fit of existing modules as well as enture modules. Retro-fit means a re-fill, in this case only the inside of the modules will be re-inserted while keeping the stainless steel housing

The Semi-Batch-Process for the production of wine / cider / fruit / alcohol vinegar is a fermentation process at which 1/3 of the fermentation liquid is discharged when reaching a residual alcohol content of ~0,3% and replaced by charging fresh mash.

The Fed-Batch-Process for the production of alcohol vinegar is a fermentation process at which 2/3 of the fermentation liquid is discharged when reaching a residual alcohol content of ~0,3%. Afterwards the discharged volume is replaced by slowly recharging the respective raw materials. In contrast to the semi-batch process, during the ongoing batch, alcohol and nutrients are apportioned in a certain quantity so that the total concentration increases slowly up to >20%.

With the fed-batch process, you can reach more than 20% acidity or up to 15% acidity with the semi-batch process. Our cross-flow filtration systems come in three different types.

What a great year! 😎

In case of producing spirit vinegar it is always necessary to use nutrients in order to provide the bacteria with basic nutritional components, in some cases of fruit vinegar it is also necessary to add nutrients to the fermentation. In other cases, fruit wine does contain enough nutrients coming from the plant so there is no need to add additional nutrients.

Do I need nutrients for all kinds of vinegar types?

Both ACETOLINE and ACETOSCAN need to be cleaned every 3 months and will automatically send a reminder for the operator to do so.

For wine vinegar with a higher turbidity and particle size, it is recommended to use capillary membranes with a higher diameter (3mm). For spirit vinegar 1,5mm is recommended.
